Hi guys! As I’m sure you’ve noticed, I’ve been in the kitchen a lot lately! One of the many blessings about being a teacher is being able to enjoy my summers. I can’t promise you the same kind of extensive posts once September rolls around but we’ll think positively! Okay SO this appetizer is light and delicious. Plus, it’s easy to make! I am so into easy on these hot summer days in Dallas. I call this dip, Texas Trash, because all of the fresh veggies combined are super colorful and remind me of a fiesta! It’s bound to be a favorite at your next grill out or summer dinner party. I’m bringing this dish to my friend’s house for a girls night get together tomorrow night!


  • 1 can of corn (15 oz) -drained and rinsed
  • 1 green bell pepper -chopped
  • 1 can of black beans (15 oz) -drained
  • 1 jalapeno -ribs and seeds removed then minced
  • 3 vine ripened tomatoes -seeded and chopped
  • 1/2 red onion -chopped
  • 1/4 cup cilantro
  • 1 garlic clove -minced
  • 1 teaspoon cumin
  • 3/4 cup Zesty Italian salad dressing
  • Salt
  • Pepper

After you’ve combined all the ingredients in a bowl all you need is some tortilla chips and you’re ready to scoop, dip, and munch! You may put the dip in the fridge and it will taste just as good the next day. πŸ™‚
